Actually I'm interested in the bare DA14531 chip to build a custom board, but since I need to do a firmware and also save 2 files of configuration it seems that I need the external memory.

That 8MB module does not figure in your selector guide but should be compatible, isn't it?.
The second question is about the Crystal Oscillator, the hardware desing guidelines recommends to trim the crystal, does it means to not use external capacitors? in that case is cool because less components = more room, and it seems we have to use tested crystals.
Third question is about the OTP, I decided to use an external memory, can be the OTP empty or do we have to flash it too? because I've read that memory can be written just once, by the way the DA14531 doesn't have like a default code in case your firmware gets corrupted during flashing the chip and make it possible to try flash it again? or that isn't necessary and the DA14531 can be flashing again without problems.

Hi Javv,
This GD25Q80CEIGR flash has not been tested on our side, from the specification it seems that it should be compatible. You can try it on your side and let us know.
Please note that the code is mirrored from the SPI flash to the SystemRAM upon boot. This means that the entirety of the code will need to fit in the 48KBs of RAM leaving space for BLE operations and buffers. That leaves about ~40KB for user code and data. Since 8Mbits are much larger than 40KB do you have the need for this much extra flash space?
Regarding the oscillator trimming please refer to pages 20-23 of the hardware guidelines
Specifically, for the 32MHz oscillator it can be seen in Table 10, page 20 that no external capacitors are required for the load capacitance.
Please also check the minimal system pcb layout in the same guide (page 34), also containing no capacitors for the 32MHz oscillator.
There is no need to write the OTP if you don’t intend to use it, so it can be empty. You can refer to the BootROM sequence, pages 63-66 of the user manual

Depending on the value of the application flags in the OTP, the system will either boot from the OTP or will start scanning for serial devices to boot from (default). You can also refer to the Booting from OTP and Serial Interfaces guide for more information
As can be seen in page 5, Table 1 of the guide the booting sequence has multiple steps to boot from different interfaces. In case something goes wrong you can reload code to the DA14531 SystemRam using one of the other serial interfaces.

There is a DA14531 soc and a DA14531MOD that is built with the DA14531 soc. The DA14531 device on itself doesn’t have flash memory, while the DA14531MOD consists of the DA14531 + 1Mbit flash memory as can be seen in the picture below
Which of the two devices interests you? In case you have no use for the DA14531MOD’s 1Mbit Flash memory you could just use the DA14531 device. The DA14531 device has an internal OTP memory in that can be used for code storage.
